Almost any machine can give up production data. The question is how invasively: reading registers over a serial port or Modbus is least invasive; a retrofit sensor or current transformer on the drive works when the controller offers nothing; vision-based counting works when nothing can be touched at all.

Will this void a warranty or disturb the controls?
A current transformer on the drive or a sensor beside the machine touches nothing the machine does. Reading registers over an existing port is read-only. Modifying PLC logic is the one option that changes the machine, and it is listed as such.
What if there is no documentation?
Common. Most controller families are identifiable from the hardware, and register maps for the common ones are known. Where nothing is known, a retrofit sensor sidesteps the controller entirely.
